Spicy arrabbiata pesto, roasted bell peppers marinated in garlic and basil, fresh arugula, and thinly sliced red onion dressed with a luscious extra virgin olive oil from Liguria and a rich balsamic vinegar from Modena, Salame Toscano, Pecorino, and the most delicious mortadella.
Simply give me a glass of red wine, and my life is complete.

Luca’s Best New York Italian Sub Sandwich
Ingredients
- 1 semolina bread hero
- 3 oz Polli Arrabbiata pesto sauce
- 4 oz Olli salame Toscano thinly sliced
- 4 oz Ferrarini mortadella
- 2 oz Lo Sifizio Pecorino thinly sliced
- 6 oz roasted bell peppers
- 1 garlic clove finely chopped
- 5/6 basil leaves julienne
- 1/3 cup red onion thinly sliced
- 1 cup fresh arugula packed
- Sogno Toscano Riviera Ligure EVOO
- Sogno Toscano Balsamic vinegar di Modena IGP
- Salt and black pepper
Instructions
- Marinate the bell peppers with garlic and basil. Drizzle with 1 tablespoon of olive oil and ½ tablespoon of balsamic vinegar, and salt and pepper to taste.
- Place the bread in the oven at 350F for 6 to 8 minutes to make the outside toasted and crunchy. Take it out of the oven and cut it in half lengthwise.
- First spread the arrabbiata pesto sauce, then layer the arugula and red onion slices. Season with salt and pepper, a drizzle of olive oil, and a drizzle of balsamic.
- Add the bell peppers, then the salame, pecorino cheese, and lastly lay the mortadella to act like a blanket to wrap everything together.
- That’s it! Simple as that. One of the most delicious meals you can make in less than 15 minutes.
