Vanilla Panna Cotta with Strawberries

Panna cotta literally means "cooked cream." You only have to cook some cream with gelatin and leave it in the fridge for a few hours to get that notorious panna cotta jiggle. That though, would only taste of regular cream, but add some sugar and your favorite flavor and it transforms into a very tasty dessert.

Ingredients

  • 1 cup whole milk
  • 1 cup heavy cream
  • 1 1/2 tsp vanilla paste
  • 3/4 cup white sugar
  • 1 1/2 tsp gelatin
  • 2 cups sliced strawberries fresh or frozen
  • 2 tbsp lemon juice
  • mint leaves or basil to garnish

Instructions

Making the panna-cotta

  • Place 2 tablespoons of boiling water in a small heatproof bowl. Sprinkle the gelatin over it.
  • Pour the milk and cream into a saucepan with half of the sugar and vanilla paste. Stir to combine and bring to a simmer
  • Add the gelatin (with by now has set) and stir until completely dissolved.
  • Pour into four ramekins, bowls, or wine glasses. Place into the fridge for at least a couple hours to set.

Making the strawberry sauce

  • Combine 1 1/2 cups of the sliced strawberries, 1/4 cup of the sugar, and fresh lemon juice into a medium saucepan.
  • Place over medium heat and bring the mixture to a boil, stirring occasionally. Cook for 15-20 minutes
